Keto Mozzarella Garlic Bread

 This is a delicious and easy bread that can go with just about any food. It doesn't take long at all, and is great as a snack or a side dish.


Ingredients:

  • 2 1/2 cups shredded mozzarella cheese
  • 2 ounces cream cheese
  • 3 eggs
  • 1 1/2 cups super fine almond flour
  • 1 teaspoon baking powder
  • 1/3 cup cooked bacon bits
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
Garlic Butter Sauce:
  • 1/4 cup browned butter
  • 4 garlic cloves, minced finely
  • 1/2 cup fresh chopped parsley

Directions:

  1. Grease a medium cast iron skillet with a cooking spray. As a replacement for the cast iron skillet, I used an 8x8 Pyrex Baking Dish. This can be set aside until needed.
  2. Combine parmesan cheese with Italian seasoning in a shallow plate.
  3.  Melt the cream cheese and mozzarella cheese in a large bowl for about a minute in the microwave. Mix with spatula until the mixture is smooth.
  4.  Combine the melted cheese, baking powder, almond flour, bacon, and eggs. Mix until smooth.
  5. Scoop dough and bread roll into the mixture of parmesan and Italian seasoning. Place each roll into the cast iron skillet or Pyrex dish. 
  6. Sprinkle parmesan on top. Place in the refrigerator for 10 minutes.
  7. Preheat the oven too 400 degrees fahrenheit, or 200 degrees Celsius. 
  8. Remove the dish from the refrigerator.
  9. Bake the garlic butter for 20-25 minutes. The bread is done when it is a golden brown.
