This is a delicious and easy bread that can go with just about any food. It doesn't take long at all, and is great as a snack or a side dish.
Ingredients:
- 2 1/2 cups shredded mozzarella cheese
- 2 ounces cream cheese
- 3 eggs
- 1 1/2 cups super fine almond flour
- 1 teaspoon baking powder
- 1/3 cup cooked bacon bits
- 1/2 cup grated parmesan cheese
- 1 teaspoon Italian seasoning
Garlic Butter Sauce:
- 1/4 cup browned butter
- 4 garlic cloves, minced finely
- 1/2 cup fresh chopped parsley
Directions:
- Grease a medium cast iron skillet with a cooking spray. As a replacement for the cast iron skillet, I used an 8x8 Pyrex Baking Dish. This can be set aside until needed.
- Combine parmesan cheese with Italian seasoning in a shallow plate.
- Melt the cream cheese and mozzarella cheese in a large bowl for about a minute in the microwave. Mix with spatula until the mixture is smooth.
- Combine the melted cheese, baking powder, almond flour, bacon, and eggs. Mix until smooth.
- Scoop dough and bread roll into the mixture of parmesan and Italian seasoning. Place each roll into the cast iron skillet or Pyrex dish.
- Sprinkle parmesan on top. Place in the refrigerator for 10 minutes.
- Preheat the oven too 400 degrees fahrenheit, or 200 degrees Celsius.
- Remove the dish from the refrigerator.
- Bake the garlic butter for 20-25 minutes. The bread is done when it is a golden brown.

- Let cool and enjoy!
