     Gluten Free Instant Pot Crack Chicken Pasta

Note: This recipe is inspired by the Shugarysweets recipe, just slightly altered to fit the needs and preferences of my family

This quick and easy chicken pasta is an instant hit. Its perfectly creamy, cheesy, and it has bacon, so obviously its absolutely DELICIOUS! I recommend making a double batch if you have large family because believe me, it’ll be gone before you know it!

Ingredients;

  • 1 ½ TBSP olive oil

  • 1 ½ lbs skinless chicken breasts, cut into bite sized pieces

  • 2 8 oz. boxes pasta shape of choice, gluten free if necessary, NOT COOKED

  • 4 cups chicken or vegetable broth

  • 6 ounces cheddar cheese, shredded

  • 8 oz. block cream cheese

  • 6-8 ounces baby spinach

  • 6 slices low sodium bacon, cooked and crumbled

  • Package of dry ranch powdered seasoning

Directions:

  1. Heat the olive oil in the instant pot on saute mode for about a minute and a half.

  2. Add chicken and continue to saute until the chicken has no pink, or about five or six minutes.

  3. Mix the ranch packet in to the chicken.

  4. Add the pasta into the instant pot and pour the broth on top.

  5. Place lid on top.

  6. Turn the valve to “sealing”.

  7. Cook on high pressure for four minutes, then quick release the pressure.

  8. Stir in cream cheese, cheddar, spinach, and bacon. Serve with roasted veggies, a side salad, and garlic bread.
