We all know that breakfast is the most important meal of the day, but let's face it- we don't always have the time to put together a full balanced meal. These egg muffins are high in protein, low in calories, and taste great.
Ingredients:
- 12 eggs
- 1/2 bell pepper
- 1/2 cup diced ham
- 1/4 cup cheddar cheese
- Salt and pepper, amount according to your taste
- 1 muffin pan
- 12 muffin cups
Directions:
- Crack 12 eggs into a medium bowl
- Beat eggs until the yolks become a liquid. Save until step 5
- Place muffin cups into pan
- Spray muffin pan with nonstick cooking spray
- Fill muffin cups 2/3 full with egg yolks
- Sprinkle the cheese, peppers, and ham evenly over the muffin cups
- Put in oven for 21-23 minutes
- Let the muffins cool, and then enjoy!
