Make Ahead Egg Muffins

     We all know that breakfast is the most important meal of the day, but let's face it- we don't always have the time to put together a full balanced meal. These egg muffins are high in protein, low in calories, and taste great.

Ingredients:

  • 12 eggs
  • 1/2 bell pepper
  • 1/2 cup diced ham
  • 1/4 cup cheddar cheese
  • Salt and pepper, amount according to your taste
  • 1 muffin pan
  • 12 muffin cups

Directions:

  1. Crack 12 eggs into a medium bowl
  2. Beat eggs until the yolks become a liquid. Save until step 5
  3. Place muffin cups into pan
  4. Spray muffin pan with nonstick cooking spray
  5. Fill muffin cups 2/3 full with egg yolks
  6. Sprinkle the cheese, peppers, and ham evenly over the muffin cups
  7. Put in oven for 21-23 minutes
  8. Let the muffins cool, and then enjoy!
