Gluten Free Sweet Cornbread

     I am thoroughly convinced that cornbread is the greatest food in history.  Problem is, most boxed mixes and recipes found online just don't quite meet my expectations. They are often too dry, too moist, too bland, etc. Not this recipe though. This will not let you down.



Ingredients:

  • 1/2 cup unsalted butter, at room temperature
  • 2/3 cups granulated sugar
  • 2 large eggs
  • 1/2 salt, add more if desired
  • 1 cup buttermilk
  • 3/4 cups cornmeal, fine
  • 1 1/4 cups Bob's Red Mill Gluten Free All-Purpose Flour, or other all purpose flour of choice
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
Directions:
  1. Preheat oven to 350 degrees F
  2. Grease 9x9 baking dish- 8x8 will also work, but will not need to be baked as long
  3. In large bowl, cream together butter and granulated sugar
  4. Mix in eggs and salt, then add the buttermilk and mix the batter
  5. Add the cornmeal, flour, baking powder, and baking soda. Mix until combined.
  6. Pour batter into greased dish.
  7. Bake for 25-35 minutes, until the edges are golden brown. To check if cooked, insert a toothpick. If it comes out clean, the bread is done.
  8. Serve while warm with chili, honey butter, stew, or just eat as a snack!
