Mediterranean Sautead Shrimp

 Mediterranean Sauteed Shrimp Skillet

    Shrimp are a true nutritional powerhouse. They are low calorie, yet pack in a shocking amount of protein and can add valuable nutrients to your diet. Shrimp can often be controversial because it is high in cholesterol, but unless you are at high risk for high cholesterol levels or have other medical conditions, shrimp can be a great addition to your diet. This recipe is for sure one of the best ways to work it into your regular meal plan.

Ingredients:                                                    

  • 1.5 lbs peeled and deveined shrimp- or you can peel and devein your own.

  • ½ tsp salt

  • 2 ½ tsp dried oregano

  • 1 ½ tsp paprika

  • 1 ½ tsp cumin

  • 2 tbsp olive oil

  • 1 sliced yellow onion

  • 6 cloves of garlic, minced

  • 1 yellow bell pepper, chopped- honestly any color will work

  • 1 tomato, diced

  • 1 tbsp capers

  • Juice from 1 lemon

  • 2 cups cooked brown rice

  • ½ cup chopped green onion



Directions:

  1. Mix the salt, oregano, paprika and cumin in a small bowl and set aside.

  2. Place shrimp in a large bowl and add half the spice blend to it. Set the other half of the spice blend aside.

  3. Heat olive oil in a large pan and saute onion for 3-5 minutes, until soft.

  4. Add in the garlic, green onion, and bell pepper. Sautee with the remainder of the spice blend until softened.

  5. Add the tomatoes and cook for 5 minutes.

  6. Stir in the capers and lemon juice.

  7. Add the shrimp and cook for 3-5 minutes, making sure to stir and flip the shrimp regularly. Be careful, shrimp overcooks and gets chewy very easily.

  8. Serve with cooked brown rice.
