Vanilla Honey Granola

 Granola is one of the most commonly misunderstood foods in the healthy eating world. It seems that half the people trying to eat healthy think of all granola as a superfood, and consume it in large amounts, while the other half thinks of all granola as terrible for you and won’t even consider touching it. The truth of the wonderfully crunchy snack lies somewhere in between. Many store bought and even home made granola brands are loaded with too much junk like excessive sugar, excessive carbs, excessive fat, and cancer causing preservatives. Most of these are best to be avoided. But not all granola is like that. If you know what to look for or are willing to do the extra work and make your own, you can enjoy some granola as a topping to your favorite smoothie bowls, mix it into your Greek yogurt, or even just snack on it on its own. And trust me, homemade granola is so worth the extra work, especially if you like to eat it warm!


What you Need:

  • 2 cups rolled oats, gluten free if necessary

  • 1 cup almonds, chopped or blended

  • Pinch of sea salt

  • ¼ cup pure maple syrup-not pancake syrup

  • 3 TBSP food grade coconut oil, melted and cooled

  • 1 ½ TBSP raw organic honey

  • 2 TSP pure vanilla extract

  • That’s all! It couldn’t be easier


What to do:

  1. Preheat oven to 300 degrees fahrenheit.

  2. Line a baking sheet with parchment paper and set aside for later use

  3. Combine the maple syrup, honey, coconut oil, vanilla extract, and sea salt in a large mixing bowl.

  4. Fold in the oats and almonds, making sure the liquids entirely coat the solids.

  5. Spread mixture onto the baking sheet, making sure it is laid out evenly- a spatula helps make this job ten times easier.

  6. Bake for 20 minutes.

  7. Rotate the baking sheet 180 degrees, then bake for another 15 minutes.

  8. Remove from the oven and let the granola cool a little.

  9. Store in a mason jar or other airtight container for up to two or three weeks.


Notes:

  • This may be more work than buying pre-made granola from the store, but I promise you, its 100% worth your time.

  • If you have any problems with gluten, make sure that you check that your oats are certified gluten free. It may cost a little more, but that’s better than getting sick from contamination.
