 Healthy Gluten Free Baked Feta Pasta

One of the most viral foods in the social media world right now is baked feta pasta. I’ve seen it all over, but had never really thought to give it a try until much more recently. After I finished it, I instantly regretted not trying it out even sooner. The roasted tomatoes give a powerful yet subtle sweetness that perfectly compliments the creamy and tangy feta cheese. The seasonings were perfect. All the elements just came together to make a delicious and easy healthy dinner that the whole family enjoyed.


How difficult is this to make?

Not difficult at all! This is great for beginning cooks without a lot of experience!


How long does it take?

Including prep and cooling time, this dish took me just and hour to make.


Is it healthy?

Absolutely. Most creamy pasta dishes are high in both fat and carbs, but feta cheese is much lower in fat which makes this a lower calorie dish. The tomatoes are an excellent source of lycopene, and if you use chickpea or lentil noodles like recommended, the dish can be high in protein and fiber.


Ingredients:

  • 2-3 cups cherry tomatoes or grape tomatoes

  • 3 tablespoons olive oil

  • 8 oz block feta cheese- pre-crumble feta cheese may not melt properly

  • 16 oz pasta- I used Banza Chickpea Noodles, but really any noodle will work. You can use your favorite shape. I used cavatappi because it was all that was in stock at the store

  • 1 TBSP Italian Seasoning

  • 1 tsp each garlic powder, pepper, oregano, and parsley

  • ½ tsp salt


Directions:

  1. Preheat the oven to 375 degrees fahrenheit.

  2. Place tomatoes in a 13 x 9 baking dish.

  3. Pour 2 tablespoons of olive oil into the dish and coat the tomatoes with it.

  4. Place the block of feta cheese in the middle of the dish.

  5. Pour the remaining tablespoon of olive over the feta block.

  6. Bake in the oven for 35 minutes. When it is done, stir the ingredients together into a sauce like mixture.

  7. Meanwhile, cook pasta to al dente according to the instructions on the box.

  8. After the pasta is al dente, strain the water and combine the noodles with the sauce in the baking dish.

  9. Serve with grilled chicken, roasted vegetables, or a side salad.
