Keto High Protein Veggie Egg Scramble

     Eggs are known to be one of the most nutritious ways to start your day. They contain many essential nutrients and have lots of protein to help keep you fill until lunch. Adding superfood vegetables into the mix with your eggs can make the dish an even better choice. The best part about this recipe is that you can easily customize it to fit your dietary needs and preferences. Don't like carrots? Just leave them out. Love bell peppers? Just add extra! If you are on a lower calorie diet, you can do just 2 eggs instead of the suggested 3, and if you are cooking for multiple people, just add extra eggs and veggies. This meal will come together in a matter of minutes, and taste great too!

Ingredients:

  • 3 eggs
  • 1/2 red bell pepper, cubed
  • 1 carrot, sliced
  • 1/4 cup chopped onion
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 Teaspoon olive oil or other cooking oil

Directions:

  1. Heat the oil in a small skillet on medium heat.
  2. Once the oil is warm, add the carrot and cook for 2 minutes
  3. Add the pepper, onion, garlic powder, and salt.
  4. Let cook for 3-5 minutes or until cooked to your liking.
  5. Add the eggs, mix and cook until done.
  6. Serve with a glass of orange juice, cup of tea, glass of milk, etc.
