Sesame Turkey Meatballs with Zucchini "Noodles"

    After a long day at school or work, it can be tempting to hit up your favorite Italian restaurant for a nice, warm plate of spaghetti with meatballs. And while there's nothing wrong with a plate of pasta every now and then, it for sure isn't something you'll want to be eating too frequently if you are trying to adopt a healthier lifestyle. But there is a solution for you pasta loving health nuts out there. Zucchini noodles, commonly referred to as "zoodles" can make you feel like you're indulging, when really, you're getting a nutrient-dense superfood dish. Pair them with these lightened up turkey meatballs, and you've got yourself a highly satisfying meal rivaling even the best Italian. 

 Ingredients:

  • 1 lb. lean ground turkey
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground oregano
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 tablespoon parsley flakes
  • 1 egg
  • 2 teaspoons sesame oil
  • 2 green onions
  • Salt and pepper
  • 2-3 zucchinis
Directions:
  1.  Preheat oven broiler on high.
  2. Combine the turkey, cumin, oregano, onion powder, garlic powder, parsley, onion, egg, sesame oil, and salt and pepper in a large bowl. Be careful to not overmix.
  3. Form into evenly sized balls. You can choose your shapes and sizes, but make sure that they are all similarly size so that they cook evenly.
  4. Place the balls onto a baking sheet lined with non-stick high heat parchment paper.
  5. Put the sheet into the oven for 8-12 minutes. Every broiler is drastically different, so make sure you check the internal temperature to ensure that they are fully cooked. Note: Poultry always needs to be cooked to 165 degrees fahreneheit.
  6. Remove from the oven and brush with sesame oil. Set aside.
  7. Spiralize your zucchini and heat up with salt and pepper in a skillet on low heat.
  8. Serve with your favorite side if desired- garlic bread is great.
  9. Enjoy your super quick and easy dinner.
